    Dear Mr. Willum:
This is to thank you for your delightful recipe for gravlax. My husband and I especially enjoyed the very entertaining story that accompanied it.
Our meal consisted of your delicious salmon and a few savoury accoutrements (thinly sliced red onion, capers, fresh dill, sweet yellow peppers, goat chevre), as well as a simple green salad and a pinot noir (the fellows at the local wineshop assured me that would be a “classical pairing”. I would have thought a riesling but there is always something to learn, isn’t there?
Thanks again for your culinary inspiration! We’re eager to try out something else from your wonderful new seafood cookbook.

I’m nowhere in the same leagues as you are but thanks for the encouragement! I loved your blog post about cooking artichokes. They are so darned good for you and I was so darned bad at cooking one up. Still have one left, which I’ll test out using your method. Thanks for posting!
